Ingredients
  • 1 1/2 tbsp olive oil
  • 5 medium potatoes, peeled and thinly sliced
  • salt and pepper to taste
  • 1/2 cup chopped onion
  • 1/2 cup chopped pepper
  • 2 cups ham, cut in julienne strips
  • 6 eggs
  • 1/2 cup cheddar cheese, grated

Directions
  1. Pour oil in large skillet. Spread half the potato slices in skillet and sprinkle with salt and pepper to taste. Top with half the nion and green pepper; sprinkle with seasonings again.
  2. Arrange half of the meet on top; repeat layers. Cover and cook over low heat 20 minutes or until potatoes are done.
  3. Break egs on top; cover and cook until eggs are desired doneness, about 5 minutes. Remove from heat. Top with cheese and cover a minute or two until cheese starts to melt.
