Basic Butter Whipping Cream Scones

- 2 1/4 cups all purpose flour shopping list
- 1/3 cup sugar shopping list
- 1 tablespoon baking powder shopping list
- 11 tablespoons chilled unsalted butter, cut into small pieces shopping list
- 3/4 cup plus 2 tablespoons heavy cream shopping list
- May add cranberries, ginger, lemon peel, chocolate chips, orange zest, chopped candied ginger, pumpkin pie spice etc. OR any of your favorite flavors or combination of ingredients shopping list

How to make it
- Blend flour, sugar, baking powder in food processor
- Add butter, cutting in by turning the processor on and off, on and off
- Mixture will resemble coarse meal
- Remove from processor and put in large bowl
- Make well in center and add 3/4 cup of the cream
- Using a fork, stir until just moist
- Place dough on a floured surface (can use floured wax paper)
- Gently knead until smooth, about 6 or 8 times
- Divide dough in half
- Pat each portion into 3/4 inch thick round
- Cut each round into 6 wedges (like when cutting a pie)
- Place the wedges on a lightly greased baking sheet
- Space them about 1 inch apart
- Brush tops with remaining 2 tablespoons cream
- Bake scones at 400 degrees until light brown, about 18 minutes.
- Cool completely, or grab a cuppa of coffee or tea and eat one while still warm
- When ready to serve re-warm in 350°F oven
- I have made them without using a food processor. Can use hand, pastry blender, or large fork to combine and make crumbly.
