Ingredients
  • 1 cup natural unsalted, unsweetened peanut butter (not Jiff or Peter Pan)
  • 1/4 cup rice vinegar
  • 1/8 cup soy sauce
  • 1 tsp fish sauce (optional)
  • 1 tbsp crushed garlic
  • 1 to 3 fresh serrano chili peppers cut into pieces (see alteration)
  • 1 1/2 tbsp sugar
  • 1 tsp salt
  • 1/4 cup toasted sesame oil
  • 1 tbsp chili oil
  • 1/2 cup freshly brewed strong black tea
  • 1/2 pound angel hair pasta
  • 2 quarts water
  • 1/2 peeled, seeded cucumber cut into thin strips
  • fresh cilantro leaves
  • fresh grated carrot (optional)

Directions
  1. Bring water to a rolling boil
  2. Add pasta, stir and cook for about 8 minutes or until done
  3. remove from stove top and drain pasta in colander, rinse off pasta under hot tap water to remove excess starch and to keep pasta from sticking.
  4. In a food processor, add the first 8 ingredients and blend
  5. remove mixture to a bowl and add sesame oil, chili oil, and hot tea
  6. The sauce can be covered and refrigerated for 1-2 days, but should be served at room temperature.
  7. Toss sauce with pasta and garnish cucumber and cilantro.
  8. This recipe serves 2-3 people, you can easily double the recipe to serve more.
  9. ENJOY!!

Alterations


I think I will add some grated carrots for a little added crunch.


I rarely have serrano chilis on hand for this dish but I do have red pepper flakes. I will add a tbsp to this dish instead. OR I use one tiny drop of Dave's Insanity sauce. Also, add one chopped up cooked chicken breast to this dish to make a real meal.
