Sea Breeze Scambled Eggs - Wolfs Version

- 4 eggs shopping list
- 2 Tbsp milk or half and half shopping list
- 1/2 tspn tarragon shopping list
- 1/2 small onion, diced shopping list
- 6 pieces leftover asparagus... cut into 3/4 to 1 inch pieces shopping list
- 2 Tbsp butter shopping list
- 4 oz. crabmeat (imitation or canned or fresh whatever you have it) shopping list
- 3 oz cream cheese cut into small pieces, softened is best shopping list
- salt and pepper to taste shopping list
- olive oil shopping list
How to make it
- In a medium bowl, mix eggs with milk, tarragon, salt, and pepper.
- In a medium skillet, sweat the onions with a splash of olive oil until soft and translucent.
- Add butter to the skillet, raise the heat to med.-high.
- Add crab and asparagus, warm them while stirring.
- Once asparagus and crab are warm, add egg mixture and scamble until about 80% done. (Your call on the 80%... I like mine "soft").
- Stir in cream cheese, continue cooking until eggs are set and cream cheese is melts.
- Serve over an English muffin with some fresh fruit...
