Nice change from "the usual" scrambled eggs. I found the base recipe and added some changes.... Like the onions and asparagus. Add a little hot sauce, some English muffins, and grits... life is good.

Ingredients
  • 4 eggs
  • 2 Tbsp Milk or half and half
  • 1/2 tspn tarragon
  • 1/2 small onion, diced
  • 6 pieces leftover asparagus... cut into 3/4 to 1 inch pieces
  • 2 Tbsp butter
  • 4 oz. crabmeat (imitation or canned or fresh whatever you have it)
  • 3 oz cream cheese cut into small pieces, softened is best
  • Salt and Pepper to taste
  • Olive oil

Directions
  1. In a medium bowl, mix eggs with milk, tarragon, salt, and pepper.
  2. In a medium skillet, sweat the onions with a splash of olive oil until soft and translucent.
  3. Add butter to the skillet, raise the heat to med.-high.
  4. Add crab and asparagus, warm them while stirring.
  5. Once asparagus and crab are warm, add egg mixture and scamble until about 80% done. (Your call on the 80%... I like mine "soft").
  6. Stir in cream cheese, continue cooking until eggs are set and cream cheese is melts.
  7. Serve over an English muffin with some fresh fruit...
