Ingredients
  • PER PERSON:
  • 1/2 chicken breast, boned
  • 1 oz thinly sliced ham
  • 1 slice bacon
  • SAUCE
  • 1 cup chopped onion
  • 1 cup chopped celery
  • 2 tablespoons butter
  • 2 tabespoons flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 cups chicken broth
  • Dash Worcestershire
  • Dash Tabasco
  • 1/3 c. sherry
  • 2 tablespoons Parmesan cheese
  • Paprika
  • NOTE: May add a pinch of rosemary if serving over mashed garlic potatoes

Directions
  1. Salt, pepper chicken breasts
  2. Place ham on chicken breast, roll, wrap in bacon, secure with toothpicks
  3. Dip rolled chicken breasts in flour, then
  4. In skillet, brown the breasts in a little shortening, then remove and
  5. set aside
  6. In another pan, saute' onion and celery in the 2 tablespoons butter
  7. Add the 2 tablespoons flour, salt pepper, and chicken broth
  8. Add dash Tabasco and Worcestershire
  9. Stir until mixture thickens
  10. Add sherry and Parmesan
  11. Place the browned breats in a shallow baking pan
  12. Pour sauce over top
  13. Sprinkle with paprika, bake at 375-400 degrees for about 45 minutes to an hour (or until browned)
  14. Serve over wild rice, white rice, or mashed garlic potatoes
