Cauliflower Gratin with Capers and Breadcrumbs

- 1 medium head cauliflower (about 1 3/4 pounds) shopping list
- 2 tablespoons olive oil shopping list
- 1 cup sweet onion, chopped shopping list
- 1 to 2 tablespoons capers, drained shopping list
- 1/2 cup fine dry breadcrumbs shopping list
- 1/4 cup Parmesan or swiss cheese, grated shopping list
- ground black pepper shopping list
How to make it
- Line a large rimmed baking sheet with foil.
- Break cauliflower into florets of about equal size (about 6 cups)
- Spread florets on baking sheet and toss with oil to coat.
- Roast at 425 degrees for 10 to 15 minutes or until tender-crisp.
- Toss cauliflower on baking sheet to loosen. Sprinkle with onion and capers.
- Roast 10 additional minutes . Transfer to 1 1/2 quart greased casserole.
- Combine bread crumbs, cheese and black pepper. Sprinkle over top.
- Broil 5 to 8 minutes or until top is browned. WATCH CAREFULLY!
- Serve hot or at room temperature.
