Cauliflower Gratin With Capers And Breadcrumbs Recipe
I found this in an old magazine. It makes a great side dish or a meatless main course paired with a nice salad.

Ingredients
  • 1 medium head cauliflower (about 1 3/4 pounds)
  • 2 tablespoons olive oil
  • 1 cup sweet onion, chopped
  • 1 to 2 tablespoons capers, drained
  • 1/2 cup fine dry breadcrumbs
  • 1/4 cup Parmesan or Swiss cheese, grated
  • ground black pepper

Directions
  1. Line a large rimmed baking sheet with foil.
  2. Break cauliflower into florets of about equal size (about 6 cups)
  3. Spread florets on baking sheet and toss with oil to coat.
  4. Roast at 425 degrees for 10 to 15 minutes or until tender-crisp.
  5. Toss cauliflower on baking sheet to loosen. Sprinkle with onion and capers.
  6. Roast 10 additional minutes . Transfer to 1 1/2 quart greased casserole.
  7. Combine bread crumbs, cheese and black pepper. Sprinkle over top.
  8. Broil 5 to 8 minutes or until top is browned. WATCH CAREFULLY!
  9. Serve hot or at room temperature.
