Cauliflower Gratin With Capers And Breadcrumbs Recipe

Ingredients

1 medium head cauliflower (about 1 3/4 pounds)

2 tablespoons olive oil

1 cup sweet onion, chopped

1 to 2 tablespoons capers, drained

1/2 cup fine dry breadcrumbs

1/4 cup Parmesan or Swiss cheese, grated

ground black pepper

Directions

Line a large rimmed baking sheet with foil.

Break cauliflower into florets of about equal size (about 6 cups)

Spread florets on baking sheet and toss with oil to coat.

Roast at 425 degrees for 10 to 15 minutes or until tender-crisp.

Toss cauliflower on baking sheet to loosen. Sprinkle with onion and capers.

Roast 10 additional minutes . Transfer to 1 1/2 quart greased casserole.

Combine bread crumbs, cheese and black pepper. Sprinkle over top.

Broil 5 to 8 minutes or until top is browned. WATCH CAREFULLY!

Serve hot or at room temperature.
