How to make it

  • For Lime Butter Sauce:
  • Purée garlic with lime juice, salt, and pepper in a blender until smooth. With motor running, add melted butter and blend until emulsified, about 30 seconds.
  • Reserve 6 tablespoons. (Use the rest for Grilled Salmon with Lime Butter Sauce or for some other lucky dish.)
  • Lime Butter Sauce Note:: Lime butter sauce can be made 1 day ahead and chilled, covered. Stir before using.

  • Prepare grill for cooking over medium-hot charcoal (moderate heat for gas).
  • Grill corn (in husks) on lightly oiled grill rack, turning, covered, until kernels are tender, 20 to 30 minutes. Remove corn from grill and let stand until cool enough to handle but still warm, about 10 minutes.
  • Discard husks and stem ends from corn. Cut kernels off cobs with a large knife and toss with herbs and prepared Lime Butter Sauce.

  • Oven Preparation Instructions:
  • Corn Note: If you aren't able to grill outdoors, corn (in husks) can be roasted directly on middle rack of a preheated 350°F oven 40 minutes. It will give you a nice roasted flavor.
  • Discard husks and stem ends from corn. Cut kernels off cobs with a large knife and toss with herbs and prepared Lime Butter Sauce.

    My corn will be knee high by the fourth of July
    And this recipe is at the top of my list to try with it. Again the fresh hives, parsley, basil, sage, and tarragon come into play for another smash hit at GR.
