Chicken Waikiki

- 2 leg/thigh quarters shopping list
- 2 whole chicken breasts shopping list
- 1/2 cup flour shopping list
- 1/3 cup oil shopping list
- salt and pepper shopping list
- Sauce: shopping list
- 1 can (1 lb 4 oz) pineapple slices shopping list
- 1 cup sugar shopping list
- 2 Tbsp cornstarch shopping list
- 1/2 cup cider vinegar shopping list
- 1 Tbsp soy sauce shopping list
- 1/4 tsp ginger shopping list
- 1 cube chicken bouillon shopping list
- 1 green bell pepper - seeded and chopped (optional} shopping list
- 2 cloves garlic - minced (optional) shopping list
How to make it
- Wash chicken and pat dry
- In heavy skillet, heat oil to med-high
- Coat chicken in flour, and brown in the skillet
- Place chicken in a shallow roasting pan, skin side up, and season with salt and pepper.
- Preheat oven to 350F
- The sauce:
- Drain pineapple juice into 2 cup measure... add enough water to make 1-1/2 cups of pineapple syrup mixture.
- In a medium saucepan, (optional here: sweat the garlic), combine sugar, cornstarch, pineapple syrup, vinegar, soy sauce, ginger, and bouillon cube.
- Bring to a boil and fast simmer for 2 minutes.
- Pour sauce over the chicken.
- Bake uncovered for 30 minutes, add pineapple slices (and green peppers if desired) and bake 30 minutes longer.
- I like to serve over a medium grain "sushi" style rice.
