Butterscotch Yams

- 6 Medium yams shopping list
- 1 C Packed light brown sugar (can use less if desired) shopping list
- 1/2 C dark corn syrup shopping list
- 1/4 C heavy cream shopping list
- 3 T butter shopping list
- 1/2 t salt shopping list
How to make it
- Place yams in a large pot and cover with cold water. Bring to boil.
- Reduce heat; cover and cook 40 to 45 minutes until yams test soft with a sharp knife.
- Drain, cool and set aside.
- Cut in halve.
- Arrange yams in a single layer in a baking dish.
- Bake 350 degrees for 15 minutes.
- Meanwhile, in a heavy 2 quart saucepan, stir together sugar, corn syrup, cream, butter and salt. Stirring constantly, bring to a boil over medium heat and for five minutes.
- Pour over yams and continue baking for 10 to 15 minutes longer, basting at least twice.
