How to make it

  • Place yams in a large pot and cover with cold water. Bring to boil.
  • Reduce heat; cover and cook 40 to 45 minutes until yams test soft with a sharp knife.
  • Drain, cool and set aside.
  • Cut in halve.
  • Arrange yams in a single layer in a baking dish.
  • Bake 350 degrees for 15 minutes.
  • Meanwhile, in a heavy 2 quart saucepan, stir together sugar, corn syrup, cream, butter and salt. Stirring constantly, bring to a boil over medium heat and for five minutes.
  • Pour over yams and continue baking for 10 to 15 minutes longer, basting at least twice.
