Fabulous Love Fudgecake

- 1 cup unsalted butter, softened shopping list
- 2 cups sugar shopping list
- 4 eggs shopping list
- 1/2 cup cocoa shopping list
- 1 cup *self-rising* flour shopping list
- 2 teaspoons pure vanilla extract shopping list
- 1 cup chopped pecans, (I chop them by hand, tastes better :) shopping list
- icing shopping list
- 1/2 stick unsalted butter, softened shopping list
- 5 tablespoons cocoa shopping list
- 1 (1 pound) box powdered sugar shopping list
- 1/2 cup strong prepared cofee shopping list
How to make it
- In bowl, with mixer, cream softened butter and sugar
- Add eggs, blend only (do not beat hard)
- Add cocoa, flour and vanilla
- Blend well
- Stir in pecans by hand
- Pour into a *greased* 9 X 13 baking dish
- Bake at *300 degrees* for about 45 to 55 minutes (don't overcook)
- Cool *5 minutes*
- Pat *gently* the sides of cake down evenly with the middle
- ICING
- In bowl, whisk powdered sugar and cocoa together to blend
- Add coffee, blend, then butter
- Spread on cake in pan
- Let cool at least 4 hours, if you can stand it, before serving
- If not, the sky will not fall, and you can cut a square to taste :)
