Barcelonas Grilled Portabello Penne

- 1 teaspoon chopped garlic shopping list
- 1/4 cup roasted red pepper strips shopping list
- 1/4 cup white wine (Opt) shopping list
- 1/4 tp 1/3 cup light cream shopping list
- 2 tablespoons parmesan cheese shopping list
- 1 teaspoon fresh chopped parsley shopping list
- Pinch each of salt and pepper shopping list
- 8 ounces of cooked penne pasta shopping list
- 1 portabello mushroom, marinated and grilled (see below) shopping list
How to make it
- Saute garlic in a bit of extra virgin olive oil, adding roasted red peppers.
- Deglaze the pan, at high heat, with white wine, allowing wine to reduce to half. (I don't use the wine so it is opt.)
- Lower to medium heat, then add cream, cheese, and seasonings.
- While sauce is cooking, grill a portabello mushroom, marinated for about an hour in olive oil, garlic, and herbs like rosemary and thyme. Grill, cap down, allowing the cap to sear, then flip and finish at a lowered heat.
- Toss penne in sauce, then arrange portabello and roasted pepper slices on top.
