Ingredients

4 carrots, shredded

2 stalks celery, finely chopped

1/2 cup raisins (I've also used chopped dates)

1/4 cup walnuts, toasted (I've also used pecans)

Dressing

1/2 cup mayonnaise

3 tbls. milk

salt and pepper to taste

Directions

In a mixing bowl, combine carrots, celery, raisins, and nuts

In another mixing bowl, whisk together dressing ingredients

Pour dressing over carrot mixture and mix to coat

Cover and refrigerate for a couple hours so the flavors marry.
