Cattle Drive Casserole

- 1 lb. Wagon Wheels pasta shopping list
- 1 lb. beef tips, cut into bite-size pieces shopping list
- 2 TB canola oil shopping list
- 1 small onion, chopped shopping list
- 1 green pepper, chopped shopping list
- 1 clove garlic, chopped shopping list
- 1 (14.5 oz.) can pinto beans, drained shopping list
- 1 (14 oz.) can diced tomatoes shopping list
- 1 TB cilantro, chopped shopping list
- 1 beef bouillon cube shopping list
- 1 TB black pepper shopping list
- 2 tsp. salt shopping list
- 1 tsp. Tabasco sauce shopping list
- 1/2 cup cheddar, grated shopping list
How to make it
- Cook pasta according to package directions, drain. Meanwhile, brown beef in oil, stirring frequently, for 10 minutes. Remove meat, set aside. Cook onion and green pepper in skillet, until onion is translucent. Add garlic and return beef to skillet. Stir in tomatoes, pinto beans, and bouillon cube, simmer until beef is tender. Add meat mixture to cooked pasta. Add cilantro, black pepper, salt, and Tabasco. Simmer for 5 minutes. Transfer to serving dish. Sprinkle with cheese.
