Skillet Raisin Bread

- 1 c. raisins shopping list
- 2 c. all-purpose flour shopping list
- 1 1/2 tsps double-acting baking powder shopping list
- 1/2 tsp baking soda shopping list
- 1/2 tsp salt shopping list
- 1 tbsp sugar shopping list
- 1/4 c. shortening , chilled shopping list
- 1 tsp. cinnamon powder shopping list
- 1 egg, beaten shopping list
- 2/3 c. buttermilk shopping list
- 1 ounce milk shopping list
How to make it
- Preheat oven o 375 d.F
- Grease a 4" x8" cast iron loaf pan.
- In a large mixing bowl, sift together flour, baking po2wder, baking soda, salt and sugar.
- Using a pastry blender, cut shortening into the flour mixture until it reaches the consisency of coarse corn meal.
- Stir in raisins and cinnamon.
- Ina separate mixing bowl, combine egg and buttermilk.
- Add flour mixture and blend well until all is incorporated.
- Pour batter into skillet until evenly distributed.
- Brush the dough with 1 ounce of milk.
- Cover and bake for 35-40 minutes for 1 1/2 hours.
