Although raisin bread is raisin bread; in a skillet it's got a wonderfully different taste. Skillet cooking is in a world by itself and great for camping. From Lodge Cast Iron cooking.

Ingredients
  • 1 c. raisins
  • 2 c. all-purpose flour
  • 1 1/2 tsps double-acting baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tbsp sugar
  • 1/4 c. shortening , chilled
  • 1 tsp. cinnamon powder
  • 1 egg, beaten
  • 2/3 c. buttermilk
  • 1 ounce milk

Directions
  1. Preheat oven o 375 d.F
  2. Grease a 4" x8" cast iron loaf pan.
  3. In a large mixing bowl, sift together flour, baking po2wder, baking soda, salt and sugar.
  4. Using a pastry blender, cut shortening into the flour mixture until it reaches the consisency of coarse corn meal.
  5. Stir in raisins and cinnamon.
  6. Ina separate mixing bowl, combine egg and buttermilk.
  7. Add flour mixture and blend well until all is incorporated.
  8. Pour batter into skillet until evenly distributed.
  9. Brush the dough with 1 ounce of milk.
  10. Cover and bake for 35-40 minutes for 1 1/2 hours.
