Light Tiramisu

- 1 1/2 cups hot espresso shopping list
- 1/4 cup superfine sugar shopping list
- 1 lb low-fat ricotta cheese shopping list
- 1/2 cup fat-free cream cheese shopping list
- 2 tbsp Kahlua shopping list
- 3 egg whites shopping list
- 12 ladyfingers shopping list
- 1 tbsp cocoa powder shopping list
How to make it
- In a bowl, dissolve 2 tablespoons of sugar in the coffee. Refrigerate.
- In a food processor, process the ricotta, cream cheese, and Kahlua until very smooth. Set aside.
- In a large bowl, beat the egg whites to soft peaks.
- Gradually add the remaining sugar, beating until stiff peaks form.
- Fold the cheese mixture into the egg whites.
- Dip the ladyfingers in the coffee until they are soaked through.
- Line the bottom of a 12-cup bowl with half the ladyfingers.
- Cover with half of the cheese mixture.
- Lay the remaining ladyfingers on the cheese mixture.
- Top with the remaining cheese mixture.
- Dust with cocoa powder.
- Chill 2 hours before serving.
