Baked Rice Pudding

- 2 cups milk shopping list
- 3 slightly beaten eggs shopping list
- 1/2 cup sugar shopping list
- 1/2 tsp. salt shopping list
- 1 3/4 - 2 cups cooked rice (unsalted) shopping list
- 1 tsp. vanilla shopping list
- 1/3 - 1/2 cup raisins (optional) shopping list
- For Creamier Pudding use less rice. shopping list
How to make it
- Preheat oven to 325.
- Combine milk, eggs sugar, vanilla and salt. Mix well.
- Add cooked rice and raisins (optional).
- Turn into 10x6x1 3/4" baking dish.
- Bake uncovered, for 30 minutes, stir.
- Sprinkle with nutmeg if desired.
- Continue baking til knife inserted halfway comes out clean, about 30 minutes more.
