Pickled Cauliflower Recipe
PICKLED CAULIFLOWER This recipe came from an estate sale. I obtained it when I purchased the family collection from the Buckley Estate in Garland, Texas in 1994.

Ingredients
  • 2 large heads cauliflower
  • 2 cups pearl onions
  • 1 cup pickling salt
  • 1 cup sugar
  • 3 cups white vinegar
  • 2 teaspoons mustard seeds
  • 1 teaspoon celery seeds
  • 1 small hot pepper

Directions
  1. Wash cauliflower and break into flowerets then scald, cool and peel onions.
  2. Mix vegetables with salt then add just enough water to cover and let stand 18 hours.
  3. Drain then rinse in cold water and drain again.
  4. Dissolve sugar in vinegar then add seeds and hot pepper and bring to a boil.
  5. Add vegetables and simmer 10 minutes.
  6. Pack vegetables into hot jars then fill jars with boiling hot liquid and seal.
