Chocolate Mint Brownies Recipe
A brownie that will disappear before your eyes. Great mixture taste of brownie & mint

Ingredients
  • BROWNIES:
  • 1 box of fudge brownie mix (or use your own favorite Brownie recipe)
  • Plus ingredients listed on box
  • FILLING:
  • 4 cups powdered sugar
  • 1 pkg (3 oz) cream cheese, softened
  • 1/4 cup milk
  • 1 tsp vanilla
  • 1/4 tsp peppermint extract
  • 8-10 drops green food color
  • FROSTING:
  • 1 cup semi-sweet chocolate chips (6 oz)
  • 1/4 cup softened butter
  • 1/4 cup whipping cream

Directions
  1. BROWNIE:
  2. Heat oven to 350
  3. Grease bottom only of 13 x 9 pan with shortening or cooking spray
  4. Make brownie mix as directed on box, (or your recipe)
  5. BE SURE TO MAKE RECIPE THAT WILL ACCOMODATE A 13 X 9 PAN NOT 8" SQUARE
  6. Bake as directed
  7. Cool completely (at least 1 hour)
  8. FILLING:
  9. In large bowl; beat all filling ingredients on medium speed until smooth
  10. Spread over COOLED brownies.
  11. Refrigerate at least 1 hour before frosting
  12. FROSTING:
  13. In small saucepan; melt chips, 1/4 cup butter and cream over low heat, stirring constantly
  14. Remove from heat; cool 10 minutes
  15. Pour over filling
  16. Refrigerate about 1 hour or until chocolate is set
  17. Cut into bars
  18. Store in refrigerator

Sounds very good to me. I am a big mint and chocolate combo fan. I am extremely drawn to the mint/green cream cheese filling. I bet it's really pretty to serve. I'm saving this to try - I bet it would be nice for St. Patty's Day...but... (whispering)...I'm going to make an early batch for me to see good they are. =)

Sounds great - I make something (with out the frosting) but use the nestle mint chocolate chips they now have...people are always surprised by the nice twist! Great posting - and as with Lunasea - great idea for st. patty's day - a keeper I say!
