Ingredients
- 4 cups Flour
- 4 tablespoons Olive Oil
- 1 teaspoon Salt
- 3/4 cup Water
- 1 lb. Or manouri or cottage cheese Mizithra Cheese
- 1 lightly beaten Eggs
- 1/2 teaspoon Cinnamon
- 1 teaspoon grated Lemon rind
- 2 tablespoons Sugar
- Olive Oil for frying
- Sugar
- Cinnamon
Directions
- Prepare a stiff dough with the flour, olive oil, salt and water.
- Leave, covered, for an hour.
- Mix cheese, egg, cinnamon and sugar.
- Roll out pieces of dough 1/8 inch thick, onto a floured board and cut into small rounds 3 inches in diameter.
- Place 1 tablespoon of the cheese mixture on each round of dough, moisten edges; fold over and seal well, pressing the edges together with a fork.
- Deep fry in hot oil until golden brown.
- Spinkle with sugar and cinnamon and serve hot.

Ooooooo Mizithra cheese, I had it once on a dish at a little Italian place and I've kept an eye out for it at the market ever since.
There is something about seemingly-savory cheese and sweet dishes that is SO delicious.
