Kaltsounia Sto Tigani - Fried Sweet Cheese Pies

Bad for your waistline!!! Great for your tastebuds!!!
Ingredients
- 4 cups flour shopping list
- 4 tablespoons olive oil shopping list
- 1 teaspoon salt shopping list
- 3/4 cup water shopping list
- 1 lb. Or manouri or cottage cheese Mizithra Cheese shopping list
- 1 lightly beaten eggs shopping list
- 1/2 teaspoon cinnamon shopping list
- 1 teaspoon grated lemon rind shopping list
- 2 tablespoons sugar shopping list
- olive oil for frying shopping list

- cinnamon shopping list
How to make it
- Prepare a stiff dough with the flour, olive oil, salt and water.
- Leave, covered, for an hour.
- Mix cheese, egg, cinnamon and sugar.
- Roll out pieces of dough 1/8 inch thick, onto a floured board and cut into small rounds 3 inches in diameter.
- Place 1 tablespoon of the cheese mixture on each round of dough, moisten edges; fold over and seal well, pressing the edges together with a fork.
- Deep fry in hot oil until golden brown.
- Spinkle with sugar and cinnamon and serve hot.
