Basic Green Chile Sauce Recipe
A delicious basic chile sauce for making green enchiladas and to use in other Southwestern dishes. I found this on an internet site for New Mexico green chilies.

Ingredients
  • 1/2c. Chopped onion
  • 1 clove garlic, minced
  • 1 TB olive oil
  • 1 TB flour
  • ½ c. chicken stock
  • 2 c. chopped green chilies (roasted, peeled, seeded)
  • ½ c. chopped tomato, fresh or canned
  • ½ tsp cumin
  • Salt to taste

Directions
  1. Heat the oil and saute the onion a few minutes, then add the garlic and cook until softened. Stir in the flour, cook 2 minutes, then slowly add the stock. Add the chili, tomato and cumin. Cover and simmer at least 30 minutes, stirring occasionally. Add water or stock if sauce gets to thick. Add salt to taste. Makes about 3 cups.
