Balsamic Roasted Butternut Squash Recipe
This butternut squash is so tasty you can't eat just a little. It makes a great side dish for pork.

Ingredients
  • 2 large butternut squash
  • 1/4 c. olive oil
  • 1/4 balsamic vinegar
  • 2 cloves minced garlic
  • 1/2 t. red pepper flakes
  • salt
  • pepper

Directions
  1. Peel squash and cut in 1 in. cubes.
  2. Toss with other ingredients.
  3. Roast at 375 in preheated oven till soft and carmelized.
