How to make it

  • Heat oven to 375F degrees.
  • Coat 8x8 inch pan with non-stick cooking spray.
  • Mix milk, lemon zest and lemon juice in medium bowl until thickened; set aside. Mix remaining ingredients in medium bowl until crumbly.
  • Press half of the crumbly mixture in pan; bake about 10 minutes or until set.
  • Spread lemon milk mixture over baked crust. Sprinkle remaining crumbly mixture over the lemon milk mixture, press down gently.
  • Bake about 20 minutes or until edges are golden brown and center is set but soft. Cool completely. Cut 4 rows by 4 rows.

    I just made this and followed all the instructions. The crust was very very dry. It as very sweet, can't eat two pieces at once (and I'm the sort of person who eats a whole cake in one sitting). I will look for another recipe next time because of the crust, which was mediocre.

    I love these! have not had in a long time, they are great from the freezer with hot coffee, or tea on a winters evening! My recipe called for Eagle Brand Milk. Also, mine you would put the oatmeal on the pan then add the lemon/milk, and put the crumbs on top and bake all at once.
    I can't wait to make it this Thanksgiving and make some for the Pastors Family....enjoy!!!!

    Mmmm, I came home from work on Friday with a craving for lemon, and found this recipe instead of the normal lemon bars--I'm never making those again! These are INCREDIBLE!!! My friends are dying over them too.
    They're so easy I might make them with my Kindergarten class too. . .who knows!

    This is good! I tried this just now. I added an egg to the oatmeal mixture though to bind the oatmeal crust together. Great flavor--- sweet and tangy in every bite!!!
