A very easy dish that I serve with steamed rice. From, How Many Potatoes in a Pound?

Ingredients
  • 4 boneless, skinless Chicken Breasts
  • 2 Tbl. Butter
  • Paprika
  • 2 Tbl. Brown Sugar
  • 1/2 tsp. Ginger
  • 1/2 C Water
  • 1/2 tsp. Tobasco Sauce
  • 1 1/2 C Orange Juice
  • 1/4 C Sugar
  • 1/2 tsp. Salt
  • 1/4 tsp. Pepper

Directions
  1. Brown chicken breasts in butter and sprinkle with paprika.
  2. Transfer butter from browning pan to a small saucepan. Add remaining ingredients. Cook over low heat until sugar has melted and sauce is reduced to desired consistency. Taste for sweetness and add more brown sugar, if desired.
  3. Spoon sauce over the chicken breasts before serving.
  4. (You may add chutney or dried cherries and sherry to this too.)
