Marco Polos Recipe
I worked in a cafeteria for a private company several years ago. This was one of my bosses specialities. I have no idea why they are called Marco Polos. I looked for the recipe on the net and could find nothing, So had to recreate from memory.

Ingredients
  • 1 sheet puff pastry
  • 4 slices ham
  • 4 slices turkey
  • 1 C. cooked broccoli
  • ½ C. cheese sauce
  • 1 egg
  • 1 T. water
  • Cheese Sauce:
  • 2 T. butter
  • 3 T. flour
  • 1 tsp. garlic pepper (no salt)
  • 1 C. milk (not skim), more as needed
  • 1 C. grated Cheddar cheese

Directions
  1. Thaw pastry sheet at room temp for 30 min. Mix egg and water. Preheat oven to 400°F.
  2. Mean while make cheese sauce:
  3. Melt butter in a small saucepan over med heat. Add flour and garlic pepper and cook, stirring constantly, until bubbly and golden, about 2 min.
  4. Whisk in about 1/3 of the milk and bring to a simmer. Repeat twice more with remaining milk, continuing to whisk as sauce thickens.
  5. Whisk in cheese and heat through. If sauce is too thick, add a little more milk.
  6. Mix about ½ C. cheese sauce with broccoli.
  7. Sandwiches:
  8. Unfold pastry on lightly floured surface. Roll into 14" square and cut into 4 (7") squares. Place 1 slice ham and turkey on each square, top with ¼ of broccoli and cheese.
  9. Brush edges of squares with egg mixture.
  10. Fold one side to top and fold ends in, then bring other side up make sure they are sealed. Place seam-side down on baking sheet. Brush with egg mixture.
  11. Bake 25 min. or until golden.
  12. Serve with remaining cheese sauce if desired.
