How to make it

  • Preheat oven to 350 d.F
  • In a large mixing bowl, combine yeast, 1 tablespoon sugar and 1 1/4 cups flour.
  • Add warm milk to flour mixture and blens well to form dough.
  • The warm milk will activae the yeast, causing the dough to rise. Cover mixure with a dry cloth and place in a warm area to rise for approximately 1 hour.
  • While the dough is rising, coat an 8-inch cast iron skillet with the strawberry jam.
  • Layer the rhubarb pieces on top of the jam until all are used.
  • Sprinkle rhubarb with sugar and nutmeg.
  • Cover and bake for 15 minutes.
  • Remove and allow to cool slightly.

  • In a large bowl, cream buter, 2 tablespoons of sugar and salt.
  • Add egg and continue to whip until light and fluffy.
  • Fold egg mixture into the rhubarb, blending thoroughly.
  • Using an ice cream scoop, place the dough, in dumpling fashion, over the rhubarb.
  • Cover the skillet and reurn rhubarb to oven.
  • ake unil rhubarb is thoroughly cooked, about 45 minutes to an hour.
  • Remove and serve warm with vanilla ice cream.

    YUM, another good post I almost missed, love anything made with rhubarb. Must make this one real soon, can you use frozen rhubarb in it, down here in the South "Ga" that's about the only kind we can find. Another 5 in my book

    I just adore rhubarb....Gonna give this a try but I don't have very much luck using yeast...That's why I don't bake bread....:)

    Thanks for the recipe! Rhubarb,and starwbwrries are great together! My Grandmother made really good rhubarb dairy custard bars, and ever since, I fell in love witht this combo. Will definatlt try! Thanx!!
