How to make it

  • Heat butter or margarine in frying pan. Add celery, onion, and mushrooms, if you wish. Saute for 5 minutes. Add thyme, salt, pepper, lemon peel, lemon juice and water. Bring to a boil. Add rice and cover. Remove from heat and let stand 5 minutes. Toss and serve.

    I've done something like this, adding all ingredients to boiling water and adding uncooked rice and simmering 15 minutes until rice is done...and then add some chives to the top of it and a little parmesan sprinkled on it, with fish it's great!!
