This is a comfort food dish. Brings back fond memories of grandma's house and Sunday dinners.
I have also baked this dish totally in the microwave.

Add some sliced brisket toward the bottom. Take some Big Jim Peppers. Cut off the stem, slice down the side and remove seeds and fiber. Put string cheese in each of about 12 Big Jim Peppers and add on top of brisket. Add the rest of the corn bread mixture, top with sharp cheddar and bake as directed. P.s. That's cooked brisket, folks!

Been looking for a recipe like this, sounds like what the hospital served at lunch while I was working there. Thanks for the post.

I made corn pudding for the first time about 5 years ago. It really is a southern dish, and one that my northern New England family and I love. What's not to love about corn? :-) This recipe looks like a real corker and I'm going to try it out once before I serve it at T-Day dinner. Thanks so much!

Oh my! Shame on ya....this looks like something where I'd have to double the recipe since one dish would be my own. Lovin' this one! Got my 5.
