This is a comfort food dish. Brings back fond memories of grandma's house and Sunday dinners. I have also baked this dish totally in the microwave.

Ingredients
  • 1 (16oz.) can whole kernel corn
  • 1 cup sour cream
  • 1 (11 oz.) can cream-style corn
  • 1 (8 oz. to 12 oz.) pkg. corn muffin mix
  • or 1½ cups self rising corn meal
  • 2 eggs, slightly beaten
  • 1 cup Cheddar cheese, grated
  • ½ cup margarine or butter, melted

Directions
  1. Preheat oven to 350°.
  2. Use ungreased 9x13-inch pan.
  3. Mix all ingredients, except cheese.
  4. Pour into pan.
  5. Bake 15 minutes.
  6. Sprinkle top with cheese and bake 20 minutes or until center is set.

I made corn pudding for the first time about 5 years ago. It really is a southern dish, and one that my northern New England family and I love. What's not to love about corn? :-) This recipe looks like a real corker and I'm going to try it out once before I serve it at T-Day dinner. Thanks so much!

Alterations


Add some sliced brisket toward the bottom. Take some Big Jim Peppers. Cut off the stem, slice down the side and remove seeds and fiber. Put string cheese in each of about 12 Big Jim Peppers and add on top of brisket. Add the rest of the corn bread mixture, top with sharp cheddar and bake as directed. P.s. That's cooked brisket, folks!
