Cold Sesame Noodles Recipe
This is perfect for hot weather dining and best of all, to take for lunch the next day. Easy to make.

Ingredients
  • 3 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 1/2 teaspoon red pepper flakes, or more to taste
  • 2 tablespoons brown sugar
  • 1/3 cup creamy peanut butter
  • 1 tablespoon toasted sesame oil
  • 1 teaspoon fresh ginger root, grated
  • 1/2 cup chicken stock or broth
  • 1 pound linguine pasta, cooked, drained and cooled
  • green onions, thinly sliced
  • cucumber, thinly sliced
  • sesame seeds

Directions
  1. In saucepan, combine soy sauce, vinegar, red pepper flakes, brown sugar, peanut butter, sesame oil, ginger root and chicken stock.
  2. Cook over medium heat until thickened and smooth.
  3. Combine linguine and sauce.
  4. Serve at room temperature, garnished with green onion, cucumber and sesame seeds.
