My husband claims he can’t cook, but every once in while I find him in the kitchen cooking something that he thought up. This is one of those. I left one very important thing out, 2 shots of tequila and lime wedges for the cook and his wife.

Ingredients
  • ½ C. butter
  • ½ red bell pepper, diced
  • ½ med onion, diced
  • 1 C. mushrooms, sliced
  • 3 cloves garlic, sliced
  • 2 T. diced jalapeno peppers
  • ½ C. tequila
  • 1 lime, juiced
  • freshly ground black pepper to taste
  • 2 lb shrimp, peeled and deveined

Directions
  1. In a large skillet, heat butter over med heat. Sauté next 5 ingredients in butter, stirring frequently, until tender.
  2. Stir in tequila, lime juice and pepper.
  3. Arrange shrimp in a buttered 13x9x2” baking dish. Pour veggie mixture over shrimp and bake at 400°F for approximately 10 min. Stir shrimp to insure that all are well cooked; if not, continue to bake until done.
  4. Serve over pasta or rice.
