How to make it

  • In a large skillet, heat butter over med heat. Sauté next 5 ingredients in butter, stirring frequently, until tender.
  • Stir in tequila, lime juice and pepper.
  • Arrange shrimp in a buttered 13x9x2” baking dish. Pour veggie mixture over shrimp and bake at 400°F for approximately 10 min. Stir shrimp to insure that all are well cooked; if not, continue to bake until done.
  • Serve over pasta or rice.
