Mikes Drunken Shrimp Recipe

Ingredients

½ C. butter

½ red bell pepper, diced

½ med onion, diced

1 C. mushrooms, sliced

3 cloves garlic, sliced

2 T. diced jalapeno peppers

½ C. tequila

1 lime, juiced

freshly ground black pepper to taste

2 lb shrimp, peeled and deveined

Directions

In a large skillet, heat butter over med heat. Sauté next 5 ingredients in butter, stirring frequently, until tender.

Stir in tequila, lime juice and pepper.

Arrange shrimp in a buttered 13x9x2” baking dish. Pour veggie mixture over shrimp and bake at 400°F for approximately 10 min. Stir shrimp to insure that all are well cooked; if not, continue to bake until done.

Serve over pasta or rice.
