Ingredients
  • 1 lb boneless skinless chicken breast halves, cut into 1-inch pieces
  • 1/2 lb. beef top sirloin, cut into 1 inch cubes
  • Marinate Ingredients:
  • 4 garlic cloves, mashed
  • 1/2 red onion, cut into 1-inch pieces .
  • 4 tbsp fresh lemon juice .
  • 1 bunch fresh mint .
  • 1/4cup extra-virgin olive oil .
  • 2 tsp crushed lemon grass .
  • 1 tsp ground cinnamon .
  • 1/4 tsp. ground cardamom
  • 1 tsp ground ginger
  • 1/4 tsp allspice
  • 1/4 tsp. Ground cloves.
  • 1 tsp fresh ground black pepper .
  • 1 tsp salt
  • To insert into skewers:
  • Onion chunks
  • Red peppe pieces
  • Chopped Cilantro to garnish.

Directions
  1. Put chicken breast pieces in one bow and beef sirloin cubes in other bowl and set aside.
  2. Mix the marinate ingredients in the blender and pour over chicken and sirloin, mix well and let marinate for 12 hours.
  3. Alternate chicken, onion, sirloin, red bell pepper on skewers; sprinkle with salt & pepper
  4. Grill until chicken and sirloin are just cooked through, turning & basting every once.
  5. Serve and enjoy.

This sounds wonderful. I can definately use the grill i have in my fireplace... well it works for now. Im sure they will come out delicious. I make something very similar to this so my hats off!
