Ingredients
  • For cookies
  • 1 1/4 cup AP flour
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1/3 cup buttermilk, well shaken
  • 1/2 tsp vanilla
  • 1/3 cup unsalted butter
  • 1/2 sugar
  • 1 large egg
  • For icings
  • 1 1/2 cups powdered sugar
  • 1 tbls. corn syrup
  • 1 tsp. lemon juice
  • 1/4 tsp. vanilla
  • 2 tbls. water
  • 1/4 cup cocoa powder

Directions
  1. For cookies
  2. Preheat oven to 350 and set rack to middle of oven
  3. Sift together flour, baking soda, and salt. Set aside
  4. In another bowl, stir together buttermilk and vanilla. Set aside
  5. Beat together butter and sugar until light and fluffy
  6. Add egg to sugar mixture and beat until combined well
  7. Mix in flour mixture and buttermilk mixture alternately in small batches on low speed Beginning and ending with flour mixture
  8. Mix until smooth
  9. Spoon 1/4 cups of batter about 2 inches apart onto a large greased baking sheet
  10. Bake until tops are puffed and golden brown and cookie springs back when touched, about 15-17 minutes
  11. Cool on cooling racks
  12. For icings
  13. Add all ingredients but 1 tbls. water and cocoa powder and mix thoroughly
  14. Place 1/2 of the icing in a small bowl
  15. Add cocoa powder and water to one of the icings and mix thoroughly
  16. Turn cooled cookies flat side up and ice half white icing and half chocolate icing

The giant version of these that sold (and probably still do sell) in all the delis on Long Island are what I ate everyday when I was in high school. I loved them. They even had a starring role in a Seinfeld episode. Haven't had one in a while. I never thought to bake them myself. Well, why not? Oh and I eat the white side first ,too, butthe white is MY favorite! Thanks for a great post!
