How to make it

  • For cookies
  • Preheat oven to 350 and set rack to middle of oven
  • Sift together flour, baking soda, and salt. Set aside
  • In another bowl, stir together buttermilk and vanilla. Set aside
  • Beat together butter and sugar until light and fluffy
  • Add egg to sugar mixture and beat until combined well
  • Mix in flour mixture and buttermilk mixture alternately in small batches on low speed Beginning and ending with flour mixture
  • Mix until smooth
  • Spoon 1/4 cups of batter about 2 inches apart onto a large greased baking sheet
  • Bake until tops are puffed and golden brown and cookie springs back when touched, about 15-17 minutes
  • Cool on cooling racks
  • For icings
  • Add all ingredients but 1 tbls. water and cocoa powder and mix thoroughly
  • Place 1/2 of the icing in a small bowl
  • Add cocoa powder and water to one of the icings and mix thoroughly
  • Turn cooled cookies flat side up and ice half white icing and half chocolate icing

    These are one of my husbands favorite cookies so as a special treat I made them yesterday. He says they taste even better then the ones from a bakery. Thanks so much for this!!! I couldn't decided what I liked more, the baked cookie or the batter!!

    The giant version of these that sold (and probably still do sell) in all the delis on Long Island are what I ate everyday when I was in high school. I loved them. They even had a starring role in a Seinfeld episode. Haven't had one in a while. I never thought to bake them myself. Well, why not? Oh and I eat the white side first ,too, butthe white is MY favorite! Thanks for a great post!
