spicey potato-lentil stew

- 2 large onions shopping list
- 2 carrots (or one large) shopping list
- 4 TBSP butter (yes,rich, satisfying, natural butter ) shopping list
- 1 bay leave shopping list
- 1 litre vegetable broth shopping list
- 150 gr brown lentils shopping list
- 500 g potatoes (those you’d use for mashed potatoes, sort of floury texture) shopping list
- 1 tsp mustard powder shopping list
- 400 gr chicken breast shopping list
- 1 to 2 TBSP garam masala (a spice mixture your get in asian shops, containing coriander, kreuzkümmel, peppercorns cardamom, cinnamon and cloves, if you cannot get it, you may want to use curry powder) shopping list
- ½ tsp cinnamon shopping list
- ½ tsp. chilipowder or chopped fresh red chilli shopping list
- salt, pepper shopping list
- If your like Koriander, then shopping list
- 1 – 2 TBSP chopped fresh coriander leaves for decoration shopping list
How to make it
- Peel and dice onion
- Peel and dice carrot
- In large pot, heat 1 TBSP butter, stir in carrot and about 1/3 of the onions untl onions are ‘glassy’
- Add bay leave and vegetable broth
- Add lentils, cover, cook for approx. 30 min. at low hwat.
- Meantime (I like to have a glass of chilled white wine at this stage, it is not necessary for the success of the recipe, though )
- Wash, peel potatoes, cut into cubes, not too small,, about 2 cm side length (heavens, this is difficult to write down )
- Using 1 TBSP butter, stir in the 2/3 of onions, until glassy
- Sprinkle with mustard powder
- Stir until evenly covered
- Add to the lentils – or the other way round – into whichever pot is the largest.
- Cook another 10 to 20 minutes or until both lentils and potatoes are almost soft
- Wash chicken breast, pat dry, cut into cubes.
- Heat remaining 1 TBSP butter to fry chicken at medium heat, turning with spatula
- Throw into pot with the potato/lentil mixture
- (yes, you are using a lot of pots for this simple dish. But, what the heck, you’ve either got a dishwasher or a husband who’ll gladly do the pots for you
- Now, season the mixture with Garam massala, cinnamon, chilli, pepper and salt.
- Before serving, sprinkle with chopped coriander leaves.
- I like to drink a yoghurt drink with this:
- Put into blender plain yoghurt, some salt and ice-water,
- Turn on blender – pour into glasses.
- Simple, but really good with this meal. Trust me
