Skillet Spanish Rice Recipe

Ingredients

6 to 8 slices bacon

1/2 cup chopped onion

1/2 cup chopped green bell pepper

1 can stewed tomatoes

1 small can tomato sauce

1 cup rice

Salt and pepper, to taste

Directions

Fry bacon in a large cast iron skillet. Remove bacon strips and set

aside

In remaining bacon grease, saute onion and pepper over medium heat.

Cut stewed tomatoes into pieces and add to skillet with 1/2 can of water. Add remaining ingredients and bring to boil. Cover; reduce heat to low and simmer 15 minutes until done. Crumble bacon over top and serve.

Think most of us grew up with this. Mom used left over ham from the holidays and froze leftovers. That way she had something to feed me when she fixed her super spicy chili I didn't like.
