How to make it

  • Dice up onion and grill in pan with butter or margarine over medium heat until golden brown.
  • Add pastrami slices to pan and brown until desired.
  • Spread mustard and mayo on bread slices.
  • Stack pastrami on bread.
  • Put cheese on top of pastrami.
  • Put grilled onions on top of cheese.
  • Add pickle on top of onions.
  • Add remaining bread slice.
  • Put assembled sandwich in pan or you can use a press or grill and warm/lightly toast on both sides.
  • Eat and enjoy!!! :)

    Sounds good, I will bookmark it to try. The stacker style pickles (sliced lengthwise) are easy to use for sandwiches. Sourdough bread would definitely add a unique twist of flavor compared to typical Rye or Italian....Italian always grills the very best for any grilled sandwich, including grilled cheese (or plain toast from your toaster in the morning), so I am interested to see how good sourdough grills, as rye bread (and most other breads) do not work quite as good for grilling as Italian. Also, don't listen to folklore from New Yorkers who say that you never put mayo on corned beef or pastrami, only mustard....spread anything you wish on it....look how Thousand Island salad dressing, or the real (red) Russian salad dressing are the best on Reuben sandwiches.....maybe New Yorkers don't eat Reuben, ha ha.

    The caramelized onion took this sandwich to a whole other level. I used a onion poppy seed ciabatta roll that I already had on-hand, however next time I will try a rye pumpernickel bread. Great recipe! Thanks for sharing!

    Made this last night...EXCELLENT sammie!! I did make a couple of changes...used sourdough onion bread, dejon mustard, grilled onions and smoked cheddar swiss cheese. Will most definately make again...thanks Wilz!!
