Ingredients
  • 2 T. EVOO
  • 2 cloves garlic, minced
  • 1 C. sliced mushrooms
  • 1 carrot, chopped
  • ½ C. celery, chopped
  • ½ C. onion, chopped
  • ½ C. bell pepper, chopped
  • White sauce
  • ½ C. sour cream
  • 2 cans tuna, drained
  • 2 hard boiled eggs, chopped
  • 1 can sliced olives, drained
  • 1 C. frozen petite sweet peas
  • Fresh ground pepper
  • 1 lb egg noodles
  • Cracker crumbs
  • 2 T. butter

Directions
  1. Make white sauce. I never measure when I make white sauce. I just throw a glob of butter in the pan, melt it, stir in flour, whisk in milk, stir and cook till its thickened.
  2. Cook pasta according to package. Drain.
  3. Heat oil in skillet, add next 6 ingredients and sauté for about 5 min.
  4. Stir sour cream in white sauce. Add sautéed veggies, eggs, olives, peas, pepper and tuna to white sauce. Stir.
  5. Add creamed tuna to noodles. Place in 9x13” baking dish. Top with cracker crumbs and dot with butter.
  6. Bake in preheated 350°F oven for 30-35 min.

I know this sounds lame,but do you also have a recipe for tuna casserole that has frozen peas and crushed potato chip on top, lost the recipe years ago and liked it. Thanks
