How to make it

  • Drain juice out of the salmon can.
  • Pour salmon into a bowl and remove the skin and the bones.
  • With a fork, break up the salmon.
  • Add seasonings to your liking. You can taste it before adding the egg to make sure it's not too salty.
  • Add crackers to the baggie and crush up.
  • After you have seasoned the salmon to your liking, add the egg and cracker crumbs. The consistency should not be too sticky. You should be able to spoon out the mixture and make patties.
  • Have your oil hot in a large cast iron skillet.
  • Carefully, carefully add the salmon patties into the hot oil and let brown on one side before turning over. Have a plate with paper towels ready to put patties on after they are removed from oil.

    I usually try to fix a fish dinner on Fridays (blame it on my WV upbringing!), but it's Sunday, and I'm having a crazy taste for some salmon croquettes today! Lately, I've been struggling (really hard) to get away from frying, so I'm going to try something different & bake 'em for a change. I'll be back with results...:D

    I love the instructions on tasting before adding the egg. Salmon is a great fish for Croquettes
    I might have to change my mind and switch this meal for tomorrow. Nice being the cook in the family I get to change what we eat in a spontaneously
    Nice recipe I printed it out to taker to the grocery store.

    I do mine pretty much the same way, but add some diced bell pepper also. Love them, never thought of serving them with grit, duhhhhhhhh where have I been all this time. The perfect go together, think that's supper tomorrow night. Yum, you have my 5 of course.

    MMMM, my favorite. My Granny used to make these for breakfast served with rice. Of course growing up in the south, I though for the longest that it was Simon and not Salmon. haha. Nothing like Salmon and rice, with biscuits and syrup. Oh wow, I am going to have to cook this now. Thanks for the post.
