Ingredients
  • 1/2 lb extra-lean ground turkey
  • 4 large cloves garlic, diced
  • 16 oz fat-free, refried black beans (Amy's is an awesome brand)
  • 1 3/4 cup medium-spicy, chunky salsa
  • 4 1/2 oz canned green chili peppers, drained and diced
  • 2 tsp chili powder
  • 3 Tbsp red onion, thinly sliced
  • 2/3 cup shredded reduced-fat Pepper-Jack cheese
  • 8 large burrito-size wheat flour tortilla
  • 1/3 cup chopped cilantro (optional)

Directions
  1. Preheat oven to 350ºF. Coat a 13 X 9" baking dish with cooking spray.
  2. Add turkey to a lightly sprayed pan, and cook over medium-high heat until lightly browned, about 5 minutes.
  3. Drain any excess liquid from pan.
  4. Add garlic, refried beans, salsa, chili peppers, chili powder and onion.
  5. Cook until heated through, about 3 minutes.
  6. Stir in cheese.
  7. Wrap tortillas in foil and warm in oven for 10 minutes.
  8. Spoon about 1/2 cup of turkey mixture onto each warm tortilla and roll up.
  9. Place seam-side down in prepared baking dish.
  10. Spray lightly with PAM or brush with about 1 tbsp spicy chili oil.
  11. Bake, uncovered, until tortillas are nicely crisp and browned, about 20 minutes.

This looks great and I would definitely add the cilantro (I love it).


My son makes his own version of baked burritos and raves about them. I mention that because I've never made any, oddly enough.
I love the sound of your recipe. Printing it for use soon. (I've not heard of refried BLACK beans-have to try them.)
I, too, like to stay out of the deep frier.

Thanks for the great post. It's been years since I have had a chimichanga. I love them, but avoid them for the same reason you point out. I can't wait to try this recipe. (Amy's offers an excellent line of food:)
