How to make it

  • WITH ELECTRIC MIXER, BEAT CREAM IN A LARGE BOWL UNTIL STIFF PEAKS FORM.
  • MIX LEMON CURD OR LEMON PIE FILLING, LEMON JUICE AND LEMON PEEL IN ANOTHER LARGE BOWL TO BLEND. FOLD IN WHIPPING CREAM AND 2 1/2 CUPS RASPBERRIES. (I would make layers of filling and some raspberries)
  • DIVIDE LEMON MIXTURE AMONG 6 ( 8 TO 10 OZ ) PARFAIT OR DESSERT CUPS. COVER AND CHILL UNTIL PARFAITS ARE COLD AND SET, 30 MINUTES OR OVERNIGHT.
  • SPRINKLE WITH REMAINING 1 CUP RASPBERRIES ON TOP AND SERVE IMMEDIATELY.

    I love lemon--this is on the top of my list! :) I also have a new recipe for lemon fudge that I found in my Simple & Delicious magazine that sounded really tasty! I'll have to post that one on here soon! :)
