Ingredients

* 1 1/2 CUPS CHILLED WHIPPING CREAM

* 1 1/4 CUPS PURCHASED LEMON CURD OR LEMON PIE FILLING

* 2 1/2 TABLESPOONS FRESH LEMON JUICE

* 2 TABLESPOONS GRATED LEMON PEEL

* 3 1/2 CUPS FRESH RASPBERRIES, 3 ( 1/2 PINT BASKETS)

Directions

WITH ELECTRIC MIXER, BEAT CREAM IN A LARGE BOWL UNTIL STIFF PEAKS FORM.

MIX LEMON CURD OR LEMON PIE FILLING, LEMON JUICE AND LEMON PEEL IN ANOTHER LARGE BOWL TO BLEND. FOLD IN WHIPPING CREAM AND 2 1/2 CUPS RASPBERRIES. (I would make layers of filling and some raspberries)

DIVIDE LEMON MIXTURE AMONG 6 ( 8 TO 10 OZ ) PARFAIT OR DESSERT CUPS. COVER AND CHILL UNTIL PARFAITS ARE COLD AND SET, 30 MINUTES OR OVERNIGHT.

SPRINKLE WITH REMAINING 1 CUP RASPBERRIES ON TOP AND SERVE IMMEDIATELY.

I love lemon--this is on the top of my list! :) I also have a new recipe for lemon fudge that I found in my Simple & Delicious magazine that sounded really tasty! I'll have to post that one on here soon! :)
