Ingredients
  • 2 15 ounce cans of black-eyed peas with jalapeno chile peppers, rinsed and drained
  • 1 chopped red sweet pepper
  • 1/2 cup of chopped sweet onion
  • 1/2 cup clipped fresh parsley
  • 1 teaspoon bottled mince garlic
  • 1/2 teaspoon salt
  • 1/8 teaspoon of black pepper
  • 1/4 cup olive oil
  • 1/4 cup rice vinegar or white vinegar
  • 1 bottle of wine of your choice

Directions
  1. Open wine, pour in glass and proceed to drink.
  2. In a large bowl combine black-eyed peas, sweet pepper, sweet onion, parsley, garlic, salt and black pepper. Add oil and vinegar; toss gently to coat
  3. Cover and chill for 2 least 1 hour or up to 24 hours.
  4. Serve with tortilla chips.
