Spicy Cabbage Soup Recipe

Ingredients
  • 1 medium onion, quartered and sliced thin
  • 3 medium cloves garlic, chopped
  • 1 tsp minced jalapeno pepper
  • 2 tsp cumin
  • 1 Tbsp dry mustard
  • 5 cups + 1 Tbsp vegetable broth
  • 2 Tbsp fresh lemon juice
  • 2 medium sized red potatoes cut in ½ inch cubes, about two cups
  • 1 15oz can diced tomatoes
  • 3 cups thinly sliced Savoy cabbage,
  • black pepper to taste

Directions
  1. Heat 1 tbsp of broth in a medium soup pot.
  2. Add onion and sauté for about 5 minutes. Stir in garlic and jalapeno. Continue to sauté for another minute.
  3. Stir in cumin and mustard, and add broth and rest of ingredients except cabbage, salt and pepper.
  4. Simmer for about 30 minutes, uncovered.
  5. Add cabbage, and cook for another 5 minutes.
  6. Season with salt and pepper to taste.

What a wonderful recipe! I loved it, but when I tried to give it 5 forks, the system messed up and only recorded one. Sorry! I always make soup "from scratch" and rarely use a recipe, but I decided to make this because I'm stuck in the house with a sprained ankle and I have all the ingredients. What a surprise! The spicing sounded strange, but I always give other cooks the respect to try their recipes "as written." Glad I did! Next time I'll probably add tofu for protein, but the flavors are wonderful. Thanks! (Is there any way to correct these rating problems?)
