How to make it

  • Place the rice in a large bowl and fill it with 2 cups of cold water. Wash the rice by stirring it around in the water until the water is opaque from the starch that coated the rice.
  • Using a colander, empty the water from the bowl.
  • Repeat steps 1 and 2 two more times or until water no longer becomes murky from the starch.
  • Put the washed rice and then the 2 cups of hot water in the rice cooker (if you choose to add salt and/or garlic to the rice, now would be the time to place it in the rice cooker) and press the "cook" button or whatever you press to start the rice cooker.
  • Once the rice is cooked, place the rice in a bowl and cool it for 30 minutes in the refrigerator.
  • After the rice has cooled, take about 2 heaping tablespoons of the rice into your (clean!) hands and mold the rice into whatever shape you want. The traditional shapes are either circular or triangular.
  • Serve or store!

    Thanks for the recipe, Neon! You have to use a medium grain rice for this or it won't work. Also, if anyone wants a mold and doesn't want to buy one, you can use ice cube trays. We use to make these in Hawaii with Calrose rice and we'd stuff them with chopped up bits of any leftover cooked meat and chopped green scallions. Good stuff and thank you again for your recipe! Adding the garlic is a great idea!

    Hurrah! A complete explanation! Now that I have my rice cooker from Japan (thanks to nephew) I will give this a try. Shaping balls I can do, but triangles? Hmmm.
