These are very dense crackers, totally gluten-free, and the all-chickpea flour version is especially high in protein and low in carbs. They're sturdy enough to hold up under the thickest of dips. Adapted from Fatfree Vegan.

Ingredients
  • 1/2 cup chickpea flour, sifted before measuring
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 2 tablespoons nutritional yeast
  • 1/2 tbsp pepper
  • 1 tsp oregano
  • 3-5 tablespoons water

Directions
  1. Preheat oven to 350F.
  2. Mix all dry ingredients together well.
  3. Begin stirring in water one tablespoon at a time. When the dough can be formed into a ball, you have added enough water.
  4. Knead the dough several times to distribute the ingredients, and then roll it in plastic wrap and let rest 15-20 minutes.
  5. Dust your work area and rolling pin well with the gluten-free flour.
  6. Divide dough in half, put half on the floured surface, and sprinkle the top with flour.
  7. Roll it out extremely thin, and cut it into 1" squares.
  8. Place crackers on a non-stick cookie sheet and repeat with other half of dough.
  9. Prick each cracker once or twice with a fork.
  10. Bake for 15 minutes, then turn off oven and allow them to cool inside.

I don't believe I've ever seen chickpea flour. Interesting idea!


These sound super jo_jo. for ambauer- u can find it at food speciality stores or sometimes in organic section in your local grocery store


Haha thanks eggy, I find it at bulk barn. Pretty cheap too, usually near the soy flour.
