My friend Tracey, a Floridian, shared dthis wonderful recip e with me. For those who live in the south and are about to welcome in the "first r ound" of those delicious home-grown 'maters - you gotta try this. It is SO good.

Ingredients
  • 1 Tbs. olive oil
  • 1 onion, sliced
  • 2 tomatoes, peeled and sliced
  • 2 Tbs. all-purpose flour
  • 2 tsp. dried basil
  • 3 eggs, beaten
  • 1/2 C. milk
  • 1/2 tsp. salt and pepper to taste
  • 1 9-inch unbaked deep dish pie crust
  • 1 1/2 C. shredded Colby-Monterey Jack cheese, divided

Directions
  1. Directions
  2. Preheat oven to 400 degrees.
  3. Bake pie shell in preheated oven for 8 minutes.
  4. Meanwhile, heat olive oil in a large skillet over medium heat.
  5. Sauté onion until soft; remove from skillet.
  6. Sprinkle tomato slices with flour and basil, then sauté 1 minute on each side.
  7. In a small bowl, whisk together eggs and milk.
  8. Season with salt and pepper.
  9. Spread 1 C. shredded cheese in the bottom of pie crust.
  10. Layer onions over cheese, and top with tomatoes.
  11. Cover with egg mixture.
  12. Sprinkle top with remaining 1/2 C. shredded cheese.
  13. Bake in preheated oven for 10 minutes.
  14. Reduce heat to 350 degrees and bake for 15-20 minutes, or until filling is puffed and golden brown.
  15. Serve warm.

Yum! This sounds perfect and I have got to try this for breakfast this weekend! Thank you for sharing the recipe =D


I made this for a weekend breakfast and the quiche was delicious. I used half-n-half instead of milk and poked holes in teh pie crusts so that they wouldn't shrink. My pie crusts are plural because I ended up with enough ingredients for 2 quiches. This was a definite make-again breakfast, thank you.
