How to make it

  • Brown the Fideo in a large pan with the oil, minced garlic and onion until Fideo is browned & onion is clear, stirring often.
  • Add 1/2 a can of tomato sauce, 3- cups of water, chicken and spices.
  • Bring to a boil, reduce heat to low, cover and simmer til liquid is almost evaporated.
  • Add remaining water & tomato sauce & cook until fideo is tender.
  • *At this point you can add more water if you like it more soupy
  • & more of the seasonings if you like it a little spicy (including white pepper) and if you REALLY want a kick, chop a jalapeno in 1/2 and de-seed or leave in the seeds (your choice) for real hotness & let it cook with the fideo. Take out afterwards.

    My home town in Western Nebraska had several home-style mexican restaurants which served fideo, which I've missed so much and have been constantly looking for a recipe to match that flavor...and this is it (less the shredded chicken)! Thank you so much.

    Reminds me of going to my friend's houses and having this delicious Mexican comfort food. My mom only cooked Cuban.
