Pizza Pasta Salad Recipe

Ingredients

8 oz uncooked spiral pasta

1/2 tsp cornstarch

1/3 cup water

1/4 cup Parm. Cheese

1/2 cup red wine vinegar

2 T olive oil

1 tsp dried oregano

1/2 tsp salt

1/2 tsp garlic powder

1/8 tsp pepper

1 1/2 cups halved cherry tomatoes

3/4 cup shredded reduced-fat cheddar cheese

3/4 cup shredded reduced part-skim mozzarella cheese

1/2 cup sliced green onions

1/2 cup sliced turkey pepperoni (about 1 1/2 oz)

Directions

Cook pasta.

In a small saucepan, combine cornstarch & water until smoothe.

Bring to a boil; cook & stir for 1-2 mins. or until thickened.

Remove from heat; stir in Parm. cheese, vinegar,oil & spices.

Drain pasta; rinse in cold water.

In a large bowl, combine remaining ingredients.

Add pasta and dressing; toss to coat.

Cover and refrigerate for at least 1 hour before serving.

This sounds so yummy!!! I'm a sucker for pasta salad!! Since I'm on a sun-dried tomato kick at the momment, I might subsitute those for the grape tomatoes. This is really a great recipe.
