Summer Squash Casserole Recipe

Ingredients

2 pounds yellow squash,sliced (6)cups

1/4 cup chopped onion

1 can cream of chicken soup(und)

1 cup sour cream

1 cup shredded carrot

1 8oz package herb-seasoned stufing mix

1/2 cup butter

Directions

Cook slice squash and onion in sauce pan with salted water for about 5 minutes

Drain

Combine cream of chicken soup,sour cream

Stir in shredded carrots

Fold in squash and onion

Combine melted butter and stuffing mix

Spread half stuffing mix in the bottom of a baking pan

Spoon vegetable mixture on top

Sprinkle remaining stuffing on top

Bake 350 degree

30 to 40 Minutes

This is an excellent recipe. My mom taught me this one--I actually use a combo of summer squash and zucchini for great color and flavor. Being a veggie, I use cream of mushroom or cream of celery soup and light sour cream. It's great as a main dish for a light supper, with a salad and perhaps some whole wheat bread.
