How to make it

  • Cook slice squash and onion in sauce pan with salted water for about 5 minutes
  • Drain
  • Combine cream of chicken soup,sour cream
  • Stir in shredded carrots
  • Fold in squash and onion
  • Combine melted butter and stuffing mix
  • Spread half stuffing mix in the bottom of a baking pan
  • Spoon vegetable mixture on top
  • Sprinkle remaining stuffing on top
  • Bake 350 degree
  • 30 to 40 Minutes

    This is an excellent recipe. My mom taught me this one--I actually use a combo of summer squash and zucchini for great color and flavor. Being a veggie, I use cream of mushroom or cream of celery soup and light sour cream. It's great as a main dish for a light supper, with a salad and perhaps some whole wheat bread.

    This sounds good.I love summer squash but any casserole i have tried was soupy.I'll try this one. Yum!
