Brussels Sprouts In Garlic Butter Recipe

This was THE recipe a friend of mine made that got me to try Brussels sprouts again. She got it from epicurean.com, but it originates from the Joy of Cooking,(better known as Wolf's Cooking Bible).

Ingredients
  • 15 fresh Brussels sprouts, halved lengthwise (do not use frozen ones)
  • 1-1/2 Tbsp butter
  • 1-1/2 Tbsp olive oil
  • 3 cloves garlic, smashed with the flat of a knife
  • Parmesan cheese, freshly grated
  • Salt and pepper, to taste

Directions
  1. Melt butter and olive oil in a medium skillet (over medium-high heat) until butter is foamy.
  2. Reduce heat to medium, add smashed garlic and cook until lightly browned.
  3. Remove garlic and discard. (Note, I usually use 5-6 cloves, mince them, and cook till translucent, and I don't discard them).
  4. Add sprouts cut side down, cover, and cook without stirring on medium-low heat 10-15 minutes or until tender when pierced with a knife.
  5. The cut side of the sprouts should get nice and browned, with a nutty, buttery flavor enhanced by garlic.
  6. Top with freshly grated parmesan and salt & pepper to taste.

Have made these for several years and they are great. One time I wanted them so badly I did use frozen brussel sprouts and they tasted good but didn't hold up very well so I agree stick with fresh ones LOL


I have made these numerous times in the past and they are sooooo delicious. A real keeper and a way to serve brussels sprouts that will win everyone. People only think they don't like them. They just haven't had them cooked properly. Love it, Dave - you are awesome and so on my fave recipe page. *hugs*


Remember when I said we'd love those Brussel Sprouts? That was a bit of an understatement!

Absolutely delicious, I made tons extra and barely had enough left to put in John's lunch.......he wouldn't stop eating them!

I purchased the smallest ones I could find because they're sweeter to begin with.....the flavor is incredible prepared this way...carmelized, nutty.........wonderful!
