How to make it

  • Cut cucumber in quarters lengthwise and slice in triangles.
  • Place cucumber slices in a bowl and sprinkle with salt, mix gently.
  • Let stand for 5 min to allow the salt to draw out the juice.
  • Meanwhile cut carrots in half lengthwise and thinly slice. Slice onions and quarter the slices. Slice the jalapenos.
  • Add carrots, onions, jalapenos, garlic, red pepper flakes, and vinegar. Gently mix well.
  • Let stand 10 min, then taste. Adjust salt, vinegar, garlic and red pepper to your taste. Add sesame seeds. Refrigerate until serving.
