Pickled Veggies Recipe

Ingredients
  • 3 med cucumbers
  • 2 carrots
  • 1 med onion
  • 2 jalapenos
  • 1 T. coarse sea salt
  • 4-6 cloves garlic, sliced
  • 1 tsp. dried red pepper flakes
  • ½ C. white vinegar
  • 3 T. toasted sesame seeds

Directions
  1. Cut cucumber in quarters lengthwise and slice in triangles.
  2. Place cucumber slices in a bowl and sprinkle with salt, mix gently.
  3. Let stand for 5 min to allow the salt to draw out the juice.
  4. Meanwhile cut carrots in half lengthwise and thinly slice. Slice onions and quarter the slices. Slice the jalapenos.
  5. Add carrots, onions, jalapenos, garlic, red pepper flakes, and vinegar. Gently mix well.
  6. Let stand 10 min, then taste. Adjust salt, vinegar, garlic and red pepper to your taste. Add sesame seeds. Refrigerate until serving.
