My mother had given me this recipe along with several others when I got married! This was always my favorite! Way before I knew about carrot cake!!

Ingredients
  • 2- 8 inch cake pans
  • 1/2 Cup shortening (or butter)
  • 1 1/2 Cups white granulated sugar
  • 2 eggs
  • 2 oz. (1/4 Cup) red food coloring
  • 2 tablespoons cocoa
  • 2 1/4 Cup sifted cake flour
  • dash of salt(not necessary)
  • 1 Cup buttermilk
  • 1 teaspoon vinegar
  • 1 teaspoon baking soda
  • Frosting
  • 3 Tablespoons flour
  • 1 Cup milk
  • 1 Cup powdered sugar\
  • 2 sticks butter
  • pecans or nuts(optional)

Directions
  1. Preheat oven to 350 degrees F. Grease & flour 2-8 inch cake pans and line with wax paper.
  2. Cream together shortening, sugar and eggs.
  3. Add red food coloring and cocoa. Mix well
  4. Add alternately, ending with liquid and mix well the flour and buttermilk.
  5. Fold in lightly - DO NOT BEAT - the vinegar and baking soda.
  6. Have cake pans ready and pour in the batter. Drop cake pans on the counter to get rid of any air bubbles before baking.
  7. Frosting Directions
  8. Cook in top of a double boiler the flour and milk until thick.
  9. Put lid on and let it cool.
  10. Cream butter and powdered sugar and add to the milk/flour that cooled. I always add some vanilla too!
  11. Put between layers and on top of cake. If desired, add chopped nuts to the top of the cake.
