ARTICHOKE SUPREME SALAD DATED 1981 This recipe came from an estate sale. I obtained it when I purchased the family collection from the Monte Estate in Plano, Texas in 1982. Tried and true.

Ingredients
  • 2 tablespoons salad oil
  • 2 tablespoons white wine vinegar
  • 3/4 teaspoon dry mustard
  • 1/2 teaspoon oregano
  • 1/2 teaspoon basil
  • 1 clove garlic
  • 6 ounces artichokes
  • 4 ounces medium shell macaroni cooked
  • 1/2 small zucchini sliced thin
  • 1 large carrot shredded
  • 2 ounces salami cut in thin strips
  • 2 tablespoons grated parmesan cheese
  • 1 cup grated mozzarella cheese

Directions
  1. Marinate oil, vinegar, mustard, oregano, basil, garlic and cut up artichokes.
  2. Let sit for a few hours then mix with remaining ingredients.

This sounds great, I love artichokes. I think I would add some capers as well, they go so well with artichokes. I am bookmarking it!
