ARTICHOKE SUPREME SALAD DATED 1981
This recipe came from an estate sale. I obtained it when I purchased the family collection from the Monte Estate in Plano, Texas in 1982. Tried and true.

Ingredients
- 2 tablespoons salad oil
- 2 tablespoons white wine vinegar
- 3/4 teaspoon dry mustard
- 1/2 teaspoon oregano
- 1/2 teaspoon basil
- 1 clove garlic
- 6 ounces artichokes
- 4 ounces medium shell macaroni cooked
- 1/2 small zucchini sliced thin
- 1 large carrot shredded
- 2 ounces salami cut in thin strips
- 2 tablespoons grated parmesan cheese
- 1 cup grated mozzarella cheese
Directions
- Marinate oil, vinegar, mustard, oregano, basil, garlic and cut up artichokes.
- Let sit for a few hours then mix with remaining ingredients.

This sounds great, I love artichokes. I think I would add some capers as well, they go so well with artichokes. I am bookmarking it!
